How To Make Fragrant Shepherd’s Pie with Apricots

Ingredients
- 500g minced lamb or beef
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1/2 tsp chili flakes (optional)
- 1 cup dried apricots, chopped
- 2 cups beef or vegetable broth
- 4 medium potatoes, peeled and cut into chunks
- 4 tbsp unsalted butter
- 1/4 cup milk
- Salt and pepper, to taste
Instructions

Preheat the oven to 180°C (350°F).

In a large pan, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant.

Add the minced lamb or beef to the pan and cook until browned and cooked through. Break up any lumps with a spoon.

Stir in the ground cumin, coriander, cinnamon, and chili flakes (if using), and cook for another minute to toast the spices.

Add the chopped dried apricots and broth to the pan. Bring to a boil, then reduce the heat and let it simmer for 10-15 minutes until the mixture thickens slightly.

Meanwhile, cook the potatoes in a large pot of salted boiling water until tender. Drain and return them to the pot.

Mash the potatoes with butter and milk until smooth. Season with salt and pepper to taste.

Pour the meat mixture into a baking dish and spread the mashed potatoes over the top, creating an even layer.

Bake in the preheated oven for 30-40 minutes, until the pie is hot and bubbling, and the potatoes are lightly golden on top.
