How To Make Summer Courgetti & Meatballs

Ingredients
- 4 courgettes
- 500g ground beef
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp dried mixed herbs
- 1/2 tsp chili flakes
- 1 can (400g) chopped tomatoes
- 1 tbsp tomato paste
- Salt and pepper, to taste
- Olive oil, for cooking
- Fresh basil leaves, for garnish
Instructions

Using a spiralizer, create courgetti noodles from the courgettes. Set aside.

In a large bowl, combine the ground beef, chopped onion, minced garlic, dried mixed herbs, and chili flakes. Season with salt and pepper. Mix until well combined.

Shape the mixture into small meatballs, approximately 1-inch in diameter.

Heat olive oil in a large frying pan over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the pan and set aside.

In the same pan, add the chopped tomatoes and tomato paste. Season with salt and pepper. Cook for 5 minutes, until the sauce thickens slightly.

Return the meatballs to the pan and simmer for another 10 minutes, until cooked through.

Meanwhile, heat olive oil in another frying pan over medium heat. Add the courgetti noodles and cook for 3-4 minutes, until slightly softened.

Serve the meatballs and sauce over the courgetti noodles. Garnish with fresh basil leaves.
